Preparation
Our cods roe is ready to eat, however the most popular way of eating it is to pan fry.
Melt a knob of butter in a pan over a medium heat and add slices of cods roe to the pan (roughly 1cm thick slices). Pan fry until golden brown, roughly 3-4 minutes. Serve with dark rye bread

Excellently smoked roe with a delicate flavour.
I had expected the roses to be firmer and able to be sliced. However, having removed the skin I spread them on top of spiced hard boiled agg on toasted croutes. The result was an excellent mid course for a special dinner.
