Dried and salted cod, sometimes referred to simply as salt cod or Bacalao is cod which has been preserved by drying after salting. Salt cod was long a major export of the North Atlantic region, and has become an ingredient of many cuisines around the Atlantic and in the Mediterranean.
Our salt cod is prepared by hand using only the freshest sustainable butterfly whole fish. Salt cod needs to be re hydrated before cooking. Soak in cold water for 24- 48 hours and change the water frequently. Although salt cod is a traditional product, there are lots of modern recipes available online. Our favourite has to be the 'Salt Cod & Chorizo Omelette' from Tom Kerridge.
Our Salt Cod is suitable to be kept in the fridge or a cold store room for 3-4 months and freezes for upto 12 months.
We supply our Salt Cod as a whole fish with each one weighing a minimum of 1.5 kg.
